The grape harvest in the "Marco de Jerez" is of utmost importance for the production of the Duke's Amontillado Generous Wine. The grapes are picked by hand to ensure they arrive at the winery in optimal condition. Once the grapes arrive at the winery, they are carefully pressed without crushing the stems, seeds, and skin.
The must obtained from this first pressing is known as "free-run must" and is the most delicate and elegant.
The wine is aged using the solera system in 550-liter American oak barrels.
The wine remains in the solera for approximately 30 years.
During this period, the wine ages under a layer of yeast called "flor" that gradually disappears, allowing oxidative aging that gives it its amber color.
Bodegas González Byass was founded in 1835, currently owns 1,844 hectares of vineyards spread throughout Spain and its wine production satisfies national and international palates.
This winery is surely the most well-known Spanish winery group in the world thanks to its Jerez wines.
