La Rioja comes from a small separate batch of the same grapes used to make the "Reserva 200 monges" wine, only this wine does not require time in the barrel or long aging in the bottle, resulting in an expressive wine with a modern and different style that can be enjoyed quickly.
The grapes are picked at an optimal state of health and ripeness in small 15 kg boxes. In the winery, a strict manual selection of bunches is made, which are destemmed and crushed without pressure, giving rise to the fermentation vats where they will remain for 12 days at a temperature of 28ºC.
Malolactic fermentation takes place in barrels, followed by aging for 14 months in American and French oak barrels, and finally the wines remain for 12 months in bottle racks.
The Cueva del Monge brand pays homage to the ancient habitat built in the Albelda cliffs by 200 monks, which today represent the group of caves of the rock scriptorium.
Vinícola Real is a small winery located in the town of Albelda de Iregua, in La Rioja, which specializes in producing long-aging wines that tell the essence of the land and the landscape, unique wines that make time their best ally to mature and create complexity.
