This Malbec is the result of a respectful production process, designed to preserve the purity of the fruit and the unique character of its origin.
The vineyards are trained on their own rootstock and trellises, with surface irrigation by furrow, and are located on alluvial, stony, deep and calcareous soils, with a marked slope that favors natural drainage.
The altitude and proximity to the mountain range provide a wide temperature range and cool breezes, prolonging the vine's vegetative cycle and ensuring a slow and balanced ripening.
The process begins with a manual harvest in 20 kg boxes, followed by a rigorous selection of bunches.
The grains are placed whole into stainless steel tanks, after carefully separating the stems.
A 48-hour pre-fermentation maceration is carried out, followed by 14 days of fermentation and a 25-day post-fermentation maceration, which provides structure, depth and quality to the wine.
Subsequently, the wine is aged for 6 months in 3rd, 4th and 5th use French oak barrels, which gives it complexity without obscuring the fruit expression.
The result is a vibrant, floral and mineral Malbec, with notes of black fruit, violets, mountain herbs and subtle spicy touches.
On the palate it stands out for its freshness, silky texture and polished tannins, making it ideal to pair with grilled meats, spicy dishes or aged cheeses.
