These limestone soils, with low yields, give the wine a firm structure and a distinctive personality.

The vineyards, with an average age of 25 years, are cultivated in goblet form for Tinto Fino and on trellises for Cabernet Sauvignon and Merlot.

The production process at Finca La Atalaya is traditional and careful.

The plots of Cabernet Sauvignon, Merlot and a selection of Tinto Fino are vinified separately, using native yeasts and adjusting the vinifications to the specific characteristics of each plot.

In the more calcareous plots, the macerations are longer and carried out at a slightly higher temperature, which allows the full potential of each variety to be extracted.

Time spent in barrels is a determining factor in the quality of this wine.

Finca La Atalaya spends around 15 months in barrels, mainly French oak and American oak, followed by a rest of at least 12 months in the bottle before going to market.

This long aging process results in a wine that seduces with its balance, depth, and aging potential.
