The plot is characterized by its sandy-clay soil and harsh climatic conditions, with large temperature swings between day and night.

Preparation: Cold maceration after destemming.

Fermentation at controlled temperature in 20,000 liter stainless steel tanks.

Malolactic fermentation for 26 days in French oak barrels.
