Sonsierra Viura Barrel-Fermented White Wine. This white wine, produced by the Sonsierra winery in La Rioja, has the La Rioja Designation of Origin and is made from 100% Viura grapes. The grapes are hand-harvested and grown in the Sonsierra region, in the heart of La Rioja Alta.
Their average age is over 40 years.
PRODUCTION: Skin maceration of the must with the skins at low temperature for 24 hours for maximum extraction of aromatic precursors.
Cold settling prior to alcoholic fermentation for approximately 24 hours.
When the sugar concentration begins to decrease, it is transferred to new American (80%) and French (20%) barrels where alcoholic fermentation is completed and it undergoes further aging on its fine lees, which are stirred to keep them in suspension twice a week for three and a half months until it is decided by tasting to rack them to take the wine back to the tank.
This wine does not undergo malolactic fermentation because we have sought to preserve the acidity that gives it its characteristic freshness.
