Vineyard and Production This Viore Verdejo White Wine on Lees is made with grapes from a plot called “Los Tordos”, located in the Rueda area.

This is a two-hectare vineyard located on the upper part of a hillside at an altitude of 770 meters.

Its soils are poor and infertile, which naturally results in a reduced vineyard yield, and where the clay-limestone profile with abundant pebbles on the surface removes minerality from the wines.

These vineyards are flanked by pine forest and a diversity of herbs and flowers that contribute a balsamic character.

For the time of production, the Verdejo variety grapes are harvested very early in the morning and later in the day to provide a higher alcoholic content and which will give complexity and character to the wine.

Once in the winery, a controlled fermentation takes place in small capacity tanks: 10,000.

Once the fermentation process is complete, part of the wine remains on its lees for a period of 7 months with periodic stirring, and the other part will mature in new 500-liter French oak barrels for a period of 5 months.
