These vines are grown in dryland areas, where yields are low, reaching only 2 kg per plant, which is equivalent to an average of 3,500 kg per hectare.
This cultivation method, along with the goblet training, contributes to the exceptional quality of the wine, offering a product with a high concentration of aromas and flavors.
The harvest takes place when the grapes are between ripeness and overripeness, ensuring a perfect balance between sweetness and acidity.
Subsequently, the wine is made using the traditional method, which includes destemming and crushing the grapes, followed by careful control of the fermentation temperature, which is kept between 24 and 28 °C.
Maceration, a key process for extracting color, tannins and aromas, lasts approximately 15 days, during which daily tastings and analyses are carried out to ensure the best result.
After malolactic fermentation, Nauta Monastrell Crianza Red Wine undergoes an aging process of 8 months in American and French oak barrels, many of them new.
This barrel aging gives the wine spicy and woody notes, which complement its fruity character.
