This wine comes from a careful selection of unique vineyards planted between 1940 and 1970, in the Burgos municipalities of San Juan del Monte, Hontangas and Quintana del Pidio, at an altitude of over 850 meters.
The vineyards are planted on clay loam soils, with a top layer of large pebbles, which provide drainage, concentration and mineral character to the wine.
The vintage began with a slightly warmer than usual end to the cycle.
The first frosts did not arrive until the end of November and were not significant until December.
This situation allowed for good dryness of the plants, which resulted in a natural balance of the vineyard.
The ripening was optimal, favored by the absence of rainfall from the beginning of September to the middle of October, and the intense thermal contrasts between day and night, along with excellent luminosity, allowed for a calm harvest.
Thus, the grapes arrived at the winery in impeccable health and with perfect ripeness.
The aging of Opimivs Red Wine was carried out for 16 months in new French oak barrels of the highest quality, from prestigious cooperages such as Cadus, Nadalie and Vicard.
This refining gives the wine supreme elegance, with complex notes of spices, cedar, ripe black fruit, cocoa and subtle mineral touches.
On the palate, Opimivs is a powerful, structured wine, with polished tannins, balanced acidity and a long, persistent finish that leaves an unforgettable impression.
