Mondejar is made with Syrah grapes, harvested from vines over 20 years old.
The climate where the grapes are grown is of a temperate Mediterranean type, with warm summers and cold winters. The vineyard has a red soil on clayey sediments, with gravel.
It also corresponds to an undulating landscape, with gentle slopes, deep soil and a sandy-clay loam texture with good permeability and aeration, scarce stoniness, limestone, small size, alkaline, also poor in organic matter and phosphorus, but rich in potassium.
Production: This wine undergoes a cold cryomaceration process at 7ºC in order to achieve a greater concentration of aromas and a perfect dissolution with tannins.
In addition, a subsequent fermentation at 18-20ºC in concrete tanks and malolactic fermentation in oak barrels.
