Utiel Requena is made with Cabernet (52%) and Merlot (48%) grapes.
Hand-harvested at night to ensure the perfect temperature.
It is fermented in an open 300 l. French oak barrel, with constant manual punch-downs that put the skins in contact with the must-wine.
There is a subsequent malolactic fermentation in the same barrels where it ages in contact with its own lees for 16 months.
