Winemaking takes place in stainless steel tanks, with a pre-fermentation maceration at very low temperature, which protects the aromas and maintains the freshness of the Semillon.

Once fermentative activity is detected, it is inoculated with Saccharomyces cerevisiae (Uvaferm 43) to complete the transformation of sugar into alcohol.

During fermentation, gentle pump-overs and periodic punch-downs are performed according to the wine's evolution during tasting, with the aim of obtaining a balanced and expressive wine.

The El Legado Semillón Los Bisole white wine does not go through wood, which highlights its varietal character, the natural freshness of the grape and its mineral profile.

Once malolactic fermentation is complete, the wine is cold-stabilized, filtered, and bottled, preserving its purity and elegance.
