El Caballito Cerrero Blanco is an agave distillate originating from Mexico, specifically from the Los Altos region of Jalisco.

It is a high-quality beverage that is produced in an artisanal way, with traditional techniques and carefully selected raw materials.

The name "Caballito Cerrero" refers to a wild horse that inhabits the region where this drink is produced.

Caballito Cerrero is a Tequila company founded in 1968 by Don Alfonso Jiménez Rosales.

It is considered one of the best tequila distilleries in the world.

Caballito Cerrero is made with Chato maguey, which in this case refers to an Angustifolia agave, which is related to or synonymous with Espadin maguey.

The agave is cooked in a brick steam oven, ground in a double-pass mill, fermented in open stainless steel tanks with wild and proprietary yeast, and distilled in stainless steel and copper.

El Caballito Cerrero Blanco is made from the tequilana agave, also known as blue agave, which is grown in the Los Altos region of Jalisco.

This plant takes between 8 and 12 years to mature, so its production is limited and requires great attention and care.

Once the agave reaches the appropriate maturity, it is harvested by hand and taken to the factory to begin the production process.

The process of making Caballito Cerrero Blanco begins with cooking the hearts of the agave in a stone oven, known as a conical oven.

Once cooked, they are crushed and fermented in wooden vats for a certain period of time, and then proceed to distillation.

The distillation of Caballito Cerrero Blanco is done in copper stills and is done twice to obtain a high quality and purity beverage.

During distillation, impurities are removed and the aromas and flavors of the agave are concentrated, resulting in a beverage with a smooth and complex taste.
