Mezcal Derrumbes presents Derrumbes Oaxaca, originating from the lands of Oaxaca (Mexico) and made from the Espadín and Tobalá agave varieties.

The development of this mezcal is done by hand by the expert distiller Maestro Javier Mateo, who, with the help of his family, produces artisanal mezcals.

First, Mezcal Derrumbes creates a large pit where they put black oak and also a stone from the earth.

After the preparations for Derrumbes Oaxaca are complete, Maestro Javier Mateo and his family begin the fermentation process, using pulque and water from the ancestral Zapotec town of Mitla to support the fermentation of the agave varieties espadín and tobalá.

The aging process creates a full-bodied mezcal with smoky and light characteristics that helps to make the mezcal's profile more mineral and fruity.
