Yllera Privée Brut Sparkling Wine from Bodegas Yllera is made with the Chardonnay and Verdejo grape varieties.
Elegant sparkling wine made from Verdejo and Chardonnay.
Traditional method (champagnoise).
Vineyard age: 10 - 15 years.
Maceration: Cold maceration for 8-12 hours.
Bottle aging: 9 months on the lees.
Champagne Method for the Production of Yllera Privée Brut Sparkling Wine: For the base wine: Selection of grapes in the vineyard.
Hand-harvested.
Exclusively free-run juice from the first pressing in a pneumatic membrane press.
Cold maceration of the must with the skins.
Fermentation in stainless steel at a controlled temperature of 17ºC.
Bottled in a Champagne-type bottle with yeasts and sugar where the second fermentation takes place in the bottle.
Aged with its lees in a Mudejar cave at 12ºC.
Disgorging and final corking.
