Bodegas González Byass was founded in 1835, currently owns 1,844 hectares of vineyards spread throughout Spain and its wine production satisfies national and international palates.
González Byass wineries rescue from the interior of their cellars the sherries, "infinite in age but finite in life".
The grape harvest in the "Marco de Jerez" is of utmost importance for the production of Tio Pepe Fino Wine, since autumn and winter in this area are mild, while spring is characterized by high temperatures and flowering.
In the summer there is not excessive heat, but there are many days of dew favoring a large production, so the grape harvest begins in August.
Palomino grapes are gently pressed; the must obtained from this first pressing is known as "free-run must," being the most delicate and elegant.
After fermentation, classification and fortification of the wine, it enters the "solera", where it will remain for approximately four years in American oak barrels.
The wine undergoes biological aging under the layer of yeast known as "flor," which gives Tio Pepe Fino Wine a unique color, aroma, and character.
