Jerez y Manzanilla, has been made with the grape varieties 75% Palomino, 25% Pedro Ximénez.
The wine is aged in American oak barrels and has an aging period of over 30 years.
For the production of Matusalem Generous Wine, the grapes are harvested by hand to ensure their optimal condition until they reach the machines.
When the grapes arrive at the winery, they are carefully pressed, without crushing the stems, seeds and skin.
This juice, extracted from the first light pressing, is called "yema" or "yema must".
