After fermentation, classification and fortification of the wine, it enters the "solera", where it will remain for approximately eight years in American oak barrels.

Sherry wine ages by being in total contact with the air, thus allowing its complete oxidation and resulting in the most delicious and delicate sherry that bears the name of Oloroso Alfonso Seco.
