Castillo San Diego rosé wine is a wine from the Jerez region in Andalusia, Spain.

It is a wine made with red grapes and is characterized by its freshness, smoothness and intense pink color.

This rosé wine is the result of a careful selection of Tempranillo grapes, grown in vineyards near the San Diego castle, which is located in the heart of the Jerez region.

The grapes are hand-harvested and selected to ensure the quality of the final product.

The process of making Castillo San Diego rosé wine begins with a cold maceration of the grapes for several hours, which allows the aromas and flavors to be extracted from the skin of the grapes.

After maceration, the grapes are gently pressed and fermented in stainless steel tanks at a controlled temperature of 16-18°C for a period of 10 to 15 days.

During fermentation, periodic pump-overs are performed to obtain a greater extraction of color and aroma.

Once fermentation is complete, the wine is transferred to another tank where a second malolactic fermentation takes place, which helps to soften the wine and give it greater complexity.

After malolactic fermentation, the wine is filtered and bottled.
