PlataIn the 2017 harvest, the El Grifo winery decided to add this new rosé to its catalog, without giving up its traditional Rosé.

This wine is made from the Listán Negro grape, following a process similar to that of its traditional Rosé, until reaching a key point of differentiation.

Once the grapes are pressed, the first tears that run from the press are separated without applying pressure.

These tears, known as free-run juice, have minimal maceration with the grape skins.

This free-run must is racked and fermented at a temperature of 17ºC, which preserves its freshness and fruity character.

After a short maturation period in the cellar, the wine is quickly clarified, filtered and bottled to highlight its freshness and characteristic flavor.

The result is a rosé wine made from free-run juice that is smooth, balanced, and refreshing.
