Vineyard.

Every year we search among our Garnacha plots for this wine those that reach full ripeness with the lowest alcohol level.

Not all the same plots participate in this vineyard every year, but we are able to blend the best Garnacha clones from different vineyards.

Elaboration.

We organize the night harvest to pick the grapes on trellises and the colder days to harvest the old goblet vines.

Once the destemmed grapes are in the tank, the must remains in contact with the skins for 48 hours at 8-10ºC.

If we have achieved the desired color, we bleed the free-run juice, taking advantage of the low temperature to perform static settling.

Once the must is clean, we ferment it at a controlled temperature between 15-18ºC.
