Mernat rosé wine is made with 100% Syrah grapes from vineyards located in Los Yébenes with an area of 4.8ha.
of gravel and clay soils at an altitude of 850m above sea level with slopes of 25%.
The harvest is done manually, carefully selecting the best bunches.
Cold pre-fermentation maceration followed by alcoholic fermentation in a stainless steel tank at low temperature.
Once alcoholic fermentation is complete, it is aged on its lees for 3 months.
Only 1800 bottles of Mernat de Noc rosé wine are produced.
