The production of this wine begins with a manual harvest in 18-kilo boxes, where a strict selection of bunches is made, removing leaves and spoiled fruit.
Winemaking takes place in stainless steel tanks, with pre-fermentation maceration at very low temperatures, under the concept of reductive fermentation, which protects the most subtle aromas of Pinot Noir.
When fermentation begins, selected yeasts are inoculated, and gentle movements are made, such as short pump-overs and periodic punch-downs, depending on the daily tasting of the must.
After malolactic fermentation, the wine is cold stabilized, filtered and bottled, preserving its fresh and natural character.
The result is a young, expressive and very elegant red wine, with notes of fresh red fruits, wildflowers and a mineral background, typical of the high-altitude terroir.
On the palate it is agile, balanced, with a vibrant acidity and very fine tannins, making it an ideal wine to pair with light dishes, pasta, oily fish or roasted poultry.
