We have before us a young wine that showcases the fruitiest character of this variety. Do you remember that mischievous baby that was our "Ilurce Rosado"? Here we have a youngster, older, but with great and playful vitality, as the slingshot shows.
That's what we try to convey through "Ilurce Tempranillo Joven".
Vineyard: For this wine, we use fresh Tempranillo grapes grown in two distant areas, but which have in common the altitude and are late harvest plots.
Elaboration.
Due to the dates when these vineyards ripen, it is very common for us to be able to organize the manual harvest on very cool mornings, so we can vat the destemmed grapes at temperatures around 10ºC; being able to extend the maceration before the alcoholic fermentation begins.
This allows us, with short maceration times, to produce very aromatic wines with intense color.
