Pago Finca Élez presents the Pago Finca Élez Cencibel Red Wine from Vino de Pago (Spain), made from several varieties of 100% Cencibel grapes.

This wine transports us to a more exquisite and unmistakably mineral vision, all the nobility of this variety in a magical terroir between plant and soil.

The pinnacle of the selection of the best grapes with elegant and stately winery treatment.

A single-vineyard wine: Every year, using grapes from the best Cencibel vineyard on our estate, we produce this varietal wine, of which we bottle a very limited series.

Cencibel de Elez is made with the elegant evolution of this variety in mind when it is well worked in the vineyard and in the winery.

With carefully studied harvest points to ensure freshness, tension, verticality, and measured aging to allow the wine to grow and refine, while maintaining its purity and high expression.

PRODUCTIONThe grapes: A selection of the best quality that is hand-harvested and subsequently undergoes a second selection in the winery.

Maceration and fermentation for 40 days in a 5000 liter French oak vat.

We use 1/3 unstemmed grapes and 2/3 destemmed grapes.

During maceration we perform manual and very careful pump-overs and punch-downs to achieve a gentle extraction of the tannins and to preserve the floral aspect of the grape.

Temperature controlled below 25°C throughout the fermentation process, and periodic checks through tastings.

Aging: A total of 14 months in French oak barrels of different sizes.
