The production process of Valdubón Tempranillo is designed to highlight the aromas and vibrant violet color characteristic of young wines: Fermentation takes place in temperature-controlled tanks at 17ºC, which allows for maximum preservation of the aromatic compounds.
The maceration lasts between 3 and 5 days, adjusted according to daily analyses and tastings to achieve an optimal balance of tannins and polyphenols.
We use co-inoculation techniques, adding the ferments for alcoholic and malolactic fermentations at the same time.
This modern method allows the fruity notes to be enhanced on the palate and nose, turning each sip into an explosion of flavor.
